This is definitely not normal behaviour. Even with a bullbar potentially changing the airflow. The clutch fan on these vehicles moves a lot of air on its own. I'd be pushing harder at the dealer.
Is it auto or manual? In either case, for a quick fix, try selecting a lower gear whilst towing a camper. Higher RPM will lighten the load on the engine, plus the fan and water pump will run faster and remove more heat.
Not sure if this is what's happening here, but labouring the engine in top gear, with a heavy load, up a hill will cause it to produce more heat. This may not be the cause of your problem, but it's something to keep in mind.
