The other way to go is after market rims. There are heaps of options with +30 to +35 offset which would be legal.
As far as 265/60r18s go, I'm running 265/65r17s (same diameter) on aftermarket +35 rims and they are good. Haven't noticed any reduction in performance and the speedo is a bit closer to correct than with the factory rubber.
